This salad is easy, fresh, and sure to be a crowd favorite. If you can make the dressing the day before and let it refrigerate overnight, it will be even better!
Ingredients:
For the Salad:
- 3 Medium Cucumbers – sliced or chopped as you’d like
- 1 Orange Bell Pepper – coarsely chopped
- 1/2 Medium Red Onion – coarsely chopped
- 1 Cup Cherry Tomatoes – seeded and chopped
- 1/4 – 1/2 Cup Crumbled Feta Cheese
For the Dressing:
- 1/4 Cup Extra Virgin Olive Oil
- 4 Tbsp Apple Cider Vinegar
- 2 Tbsp Lemon Juice
- 3 Garlic Cloves – minced
- 1 tsp Honey Dijon (or use regular dijon/spicy brown mustard if that’s all you have on hand)
- 1 tsp Kosher Salt
- 1 tsp Dried Oregano
- 1 tsp Sugar (or 1/s tsp Splenda)
1. Combine all dressing ingredients in a small bowl or pourable container. Refrigerate dressing while chopping veggies (or overnight if you have the time).
2. Add chopped veggies and cheese to a large bowl and toss with dressing until thoroughly coated. Refrigerate before serving.
