Cucumber Salad

This salad is easy, fresh, and sure to be a crowd favorite. If you can make the dressing the day before and let it refrigerate overnight, it will be even better!Cucumber Salad

 

Ingredients:

For the Salad:

  • 3 Medium Cucumbers – sliced or chopped as you’d like
  • 1 Orange Bell Pepper – coarsely chopped
  • 1/2 Medium Red Onion – coarsely chopped
  • 1 Cup Cherry Tomatoes – seeded and chopped
  • 1/4 – 1/2 Cup Crumbled Feta Cheese

For the Dressing:

  • 1/4 Cup Extra Virgin Olive Oil
  • 4 Tbsp Apple Cider Vinegar
  • 2 Tbsp Lemon Juice
  • 3 Garlic Cloves – minced
  • 1 tsp Honey Dijon (or use regular dijon/spicy brown mustard if that’s all you have on hand)
  • 1 tsp Kosher Salt
  • 1 tsp Dried Oregano
  • 1 tsp Sugar (or 1/s tsp Splenda)

 

1. Combine all dressing ingredients in a small bowl or pourable container. Refrigerate dressing while chopping veggies (or overnight if you have the time).

2. Add chopped veggies and cheese to a large bowl and toss with dressing until thoroughly coated. Refrigerate before serving.
